How to use tortillas five ways

So everyone knows how to use tortillas to make tacos, right? But did you know that you could use our Doña Cholita organic corn tortillas for so much more than that? To help you on your way we thought we would show you how to use tortillas five ways! 

  1. Enchilada Bake

To make a delicious Enchilada Bake fill each corn tortilla with slow cooked Mexican beef mince, pulled pork, shredded chicken or a vegetarian black bean mix. Roll them up snugly and place them alongside each other, seam side down, in a baking dish. Cover the enchiladas with your favourite tomato salsa and finish with some grated cheese then bake the enchiladas in the oven until warmed through and the cheese is golden and melted.

  1. Mexican Pizza

Use your corn tortilla as a mini Mexican Pizza base. Top your tortilla with chunky salsa, jalapeños, fresh corn kernels, black beans and some grated cheese and grill until golden. Serve your Mexican Pizzas with guacamole, a dollop of sour cream and a splash of chili sauce. 

  1. Quesadilla

To make a cheesy Quesadilla snack lay a corn tortilla on a flat surface and spread with a mixture of mashed pinto beans and salsa and add some sliced spring onions, diced tomato and grated cheese. Top with another tortilla to make a ‘sandwich’ then gently cook your quesadilla in a non-stick fry pan on both sides, turning carefully with a kitchen slide. Chop your quesadilla into quarters to serve. 

  1. Breakfast Burrito

For the ultimate Breakfast Burrito spread your corn tortilla with some sour cream and then some salsa, spoon on some corn kernels, cooked scrambled egg, diced tomato, coriander leaves and an avocado slice. Pour over your favourite hot sauce and roll up burrito-style.

  1. Tortilla Bowl

A Tortilla Bowl is a fun way to feed the kids. Slightly warm your corn tortilla in the microwave or on a gas stove top and mould it to fit inside a ½ cup muffin tray. Repeat for each of the muffin tray holes and bake at 190 degrees Celsius for 10-15 minutes until slightly golden. Cool the tortilla bowls in the tray for five minutes before inverting onto a wire rack. To serve, fill with tortilla bowl with your favourite Mexican fillings.
