Huevos con Totopos (Scrambled eggs & corn chips)

Scrambled eggs with totopos is a winner with the little ones in our house.

Simple & totally tasty. The chips keep their crunch and the eggs cook beautifully around them. Top with some spicy salsa to give them a real Mexican kick.

INGREDIENTS

1 bag of Dona Cholita Totopos (White are our fave with this)

8 eggs

1 tbsp oil for frying

Instructions

whisk together eggs in a large bowl.

Add the bag of totopos to the raw egg mixture, allow to soak for a couple of minutes

Heat oil in a large frying pan, add the egg and tototpos mix. Move around and flip until egg is almost cooked through.

Serve with Salsa & refried beans

Pro Tip: When scrambling eggs take them out of the pan when the egg is about 85% cooked. This way they will be soft and moist on your plate.

The eggs will cook through on your plate from the heat. If you cook the egg 100% in the pan the scramble will be a little dry to eat.
