A Tacography of Mexico


This cute graphic illustrates ‘A Tacogpraphy of Mexico’. It’s a play on words of course. The landscape map or ‘cartography’ of Mexico isn’t drawn with tacos shapes for mountains and valleys. This ‘Tacography of Mexico is a gastronomic guide in culinary cartography. It’s a detailed map illustrating some of the more significant regional taco variations found right across Mexico. The illustration is borrowed from the book ‘Tacopedia’ by Deborah Holtz and Juan Cars Mena with a forward by René Redzepi. The book is an encyclopaedic tribute to one of Mexico’s – and the world’s – most popular street foods: the taco.

What is a Taco?

A taco starts with a tortilla just like our organic Doña Cholita blue and white corn tortillas. The taco happens when the tortilla is folded or rolled around a filling and then eaten by hand. A taco can be made with a variety of fillings including beef, pork, chicken, goat, seafood, legumes and even fried crickets with garnishes such as salsa, chili, cheese, avocado, coriander, tomato, onion and lettuce. There’s no need for a plate or cutlery – just your hands. That’s why it makes the perfect street food.

Where are Tacos Found in Mexico?

Tacos are found right across Mexico in every state and department. But there are many regional variations based.

North – Tacos de Cabrito

In Neuvo Leon they enjoy Goat Belly Tacos served with chilli, red onion and crumbled cotija – a hard cow’s milk cheese.

North West Coast – Tacos de Pescado 

Fish Tacos originated in Baja California where they consist of grilled or fried fish, lettuce or cabbage, pico de gallo, and a creamy sauce. They can also be found in other coastal areas of Mexico.

South – Tacos de Chapulines

Crickets or grasshoppers are popular down in Oaxaca where they are eaten on their own as a snack or wrapped in a tortilla to make a taco. They are usually flavoured and toasted first.

Central – Tacos de Guisado

Street stands in Mexico City serve a variety of stewed fillings such as beef and pork for your tacos for breakfast and lunch. Tacos de Guisado considered comfort food like your Mum would make. Tacos de Lengua or beef tongue may even be on the menu!
