The Northern Rivers is known for our festivals and we are pretty excited to see our tortillas and totopos being packed into Mamacitas Food Truck for the event.
Marty and Trish have a lifestyle between working music festivals, surfing and their food truck. Having spent years in the family’s kitchen creating the authentic tastes, they added love and courage to bring this food truck lifestyle from LA to the GC. And now it’s coming to Byron Bay for Splendor in the Grass!
Trish creates all the stocks, marinades, salsas and sauces from fresh local ingredients just like how they use to eat in Popotla. The trucks motto is “Farm to Truck” it is a 1980 p30 Chevrolet Grumann Olsen step van, 7 meters long 3 meters tall and 2.5 meters wide made of aluminum. This truck is a retired Frito Lay delivery van that spent its final 5 years feeding the homeless in Stockton, California day-old bread.
What to expect on the MENU at Splendor – Taco’s served up with our totopos, tostada salad bowls, burritos and of course nachos using our super crunchy totopos topped with cheese, salsa roja, meat, jalapenos optional, loaded with sour cream, guacamole, salsa fresca & cotija cheese
